Not entirely sure how I came up with this one. It was a last minute Thanksgiving "uh-oh, what about dessert?" thing. But it was a hit! :)

Blue Ribbon Recipe

This yummy cupcake filled the Test Kitchen with the comforting aromas of autumn! They're bursting with cinnamon and pumpkin pie spices. These cupcakes are moist with a slight crunch from the walnuts. The cream cheese frosting is perfect on top. No one will believe these started with a boxed mix... they taste like they're from scratch. Delicious! The Test Kitchen

Ingredients

  • 1 box
    golden vanilla cake mix, prepared as directed & uncooked
  • 1 c
    pumpkin pie mix
  • 1/2 c
    brown sugar
  • 2 c
    chopped walnuts, divided by half
  • 2 Tbsp
    cinnamon, ground
  • 1 pkg
    cream cheese frosting

How to Make Tasty Autumn Cupcakes

Step-by-Step

  1. Combine cake batter and pumpkin mixture in large bowl, mixing well.
  2. Add cinnamon, 1 cup walnuts & brown sugar, mixing well.
  3. Spoon into cupcake liners about 2/3 full. Bake at 375 until toothpick comes out clean.
  4. Let cool, and frost generously. Sprinkle with remaining walnuts.
