This is a Wafer Cake that i modified for 2. One to eat, and one to freeze for another time. Some time I like a little something sweet at snack on. Hope you like the out come, my family does. ; )

1 cvanilla wafers cookies

2eggs
-
2 Tbspmilk

1/2 stickbutter, room temperature

tiny pinchsalt

1/4 ccoconut flakes
-
1/4 cchopped peacan
-
1/2 csugar
-
1/2 Tbsppowdered sugar

1/4 ctequila
- IT IS BEST TO USE MINI PANS FOR THIS RECIPE.
How To Make taquila wafer cake 4 one

1Set Oven at 325 F Cream together,butter, sugar and salt. Add in eggs (one at a time). Add all of crushed wafers and Milk. Add coconut flakes and pecans . Spray pans with Non-stick cooking spray. -
2Bake in small loaf pan for 35 to 45 min. While waiting on cake to bake, in small bowl mix together powdered sugar and tequila. Set aside for later. Test with toothpick for doneness. Test the center of cake, the toothpick should come out clean.

3While still warm, pierce with skewers or knife tip. Pour tequila mixture over the top. Let cool. ENJOY !
