sweet potato pound cake

I have been making this cake since the mid 1960's. It was my Dad's favorite and I made it for him every year for Thanksgiving. He always liked it as a layer cake with the same frosting you would put on a German Chocolate Cake. I prefer it with a plain sugar glaze using maple extract instead of vanilla.

Ingredients

  • 1 1/2 cups cooking oil
  • 2 cups sugar
  • 4 - eggs (separated)
  • 2 1/2 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 1/2 cups mashed sweet potatos (use fresh, not canned)
  • 1 cup pecans (optional)
  • 1 teaspoon vanilla
  • 4 tablespoons hot (not boiling) water

How To Make sweet potato pound cake

  • Step 1
    Preheat oven to 350. Combine oil and sugar and beat until smooth. Separate four eggs and add yolks to liquid mixture and beat well. Add 4 tablespoons hot water.
  • Step 2
    Mix all dry ingredients together and add to liquid ingredients beating well. Stir in sweet potato and nuts. Add vanilla and beat, then fold in stiffly beaten egg whites.
  • Step 3
    Bake in greased bundt pan for one hour - test with wood skewer for doneness.
  • Step 4
    You may cook in three 9" pans if you prefer a layer cake. Put it together with the same frosing you would use on a German Chocolate Cake or a good Cream Cheese Frosting.
