sweet potato pound cake

I have been making this cake since the mid 1960's. It was my Dad's favorite and I made it for him every year for Thanksgiving. He always liked it as a layer cake with the same frosting you would put on a German Chocolate Cake. I prefer it with a plain sugar glaze using maple extract instead of vanilla.

Ingredients
- 1 1/2 cups cooking oil
- 2 cups sugar
- 4 - eggs (separated)
- 2 1/2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 1/2 cups mashed sweet potatos (use fresh, not canned)
- 1 cup pecans (optional)
- 1 teaspoon vanilla
- 4 tablespoons hot (not boiling) water
How To Make sweet potato pound cake

Step 1Preheat oven to 350. Combine oil and sugar and beat until smooth. Separate four eggs and add yolks to liquid mixture and beat well. Add 4 tablespoons hot water.

Step 2Mix all dry ingredients together and add to liquid ingredients beating well. Stir in sweet potato and nuts. Add vanilla and beat, then fold in stiffly beaten egg whites.

Step 3Bake in greased bundt pan for one hour - test with wood skewer for doneness.

Step 4You may cook in three 9" pans if you prefer a layer cake. Put it together with the same frosing you would use on a German Chocolate Cake or a good Cream Cheese Frosting.
