sweet potato cupcakes

I made these this weekend for company,everyone loved them. My niece said she wants them for Thanksgiving. I added the candied pecans at the last minute,but they were delicious!

Ingredients
- 1 box duncan hines spice cake mix
- 3 - eggs
- 1 1/3 cups water
- 1/3 cup oil
- 1 small pkg vanilla instant pudding
- 1 cup sweet potato puree
- 8 ounces cream cheese,softened
- 1/4 cup sugar
- 1 - egg
- 1 teaspoon vanilla
- - cream cheese frosting
- - candied pecans,optional
How To Make sweet potato cupcakes

Step 1Preheat oven to 350 degrees.

Step 2Prepare cake mix according to directions adding vanilla pudding and potato puree.

Step 3In a separate bowl, beat cream cheese, sugar, egg and vanilla well.

Step 4Spray cupcake pans or muffins cups with Pam. Spoon about 2 T cake batter in cups add 1 T cream batter on top, top with another 1-2 T. of cake batter.

Step 5Bake cupcakes 18-21 minutes.

Step 6Cool on wire Crack. Frost with your favorite cream cheese frosting(please don't use the canned stuff!) and decorate tops with candied pecans.
