sweet potato cupcakes

I made these this weekend for company,everyone loved them. My niece said she wants them for Thanksgiving. I added the candied pecans at the last minute,but they were delicious!

Ingredients

  • 1 box duncan hines spice cake mix
  • 3 - eggs
  • 1 1/3 cups water
  • 1/3 cup oil
  • 1 small pkg vanilla instant pudding
  • 1 cup sweet potato puree
  • 8 ounces cream cheese,softened
  • 1/4 cup sugar
  • 1 - egg
  • 1 teaspoon vanilla
  • - cream cheese frosting
  • - candied pecans,optional

How To Make sweet potato cupcakes

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Prepare cake mix according to directions adding vanilla pudding and potato puree.
  • Step 3
    In a separate bowl, beat cream cheese, sugar, egg and vanilla well.
  • Step 4
    Spray cupcake pans or muffins cups with Pam. Spoon about 2 T cake batter in cups add 1 T cream batter on top, top with another 1-2 T. of cake batter.
  • Step 5
    Bake cupcakes 18-21 minutes.
  • Step 6
    Cool on wire Crack. Frost with your favorite cream cheese frosting(please don't use the canned stuff!) and decorate tops with candied pecans.
