You will need a tube pan for this recipe. This cake is very dense and has spices generally used for fall/winter foods so I usually make this around the holidays. Everyone enjoys this cake; it disappears quickly!If you prefer an iced cake, try it with a caramel icing!

Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs
- 3 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 cup walnuts, chopped
- 2 cups sweet potatoes, mashed
- 1 teaspoon vanilla extract
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 cup buttermilk
How To Make sweet potato cake

Step 1Cream butter and sugar well.

Step 2Beat in eggs; one at a time.

Step 3Add sweet potatoes, vanilla and spices to the creamed mixture and beat well.

Step 4Incorporate salt, soda and baking powder into flour. Alternate adding buttermilk and flour into the creamed mixture. Begin and end with flour.Beat well.

Step 5Add nuts and mix well.

Step 6Pour into a large tube pan that has been greased and floured, Bake at 350* oven for 1hr.Cool in pan 10-15mins. then turn out onto serving piece.
