You will need a tube pan for this recipe. This cake is very dense and has spices generally used for fall/winter foods so I usually make this around the holidays. Everyone enjoys this cake; it disappears quickly!If you prefer an iced cake, try it with a caramel icing!

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped
  • 2 cups sweet potatoes, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 cup buttermilk

How To Make sweet potato cake

  • Step 1
    Cream butter and sugar well.
  • Step 2
    Beat in eggs; one at a time.
  • Step 3
    Add sweet potatoes, vanilla and spices to the creamed mixture and beat well.
  • Step 4
    Incorporate salt, soda and baking powder into flour. Alternate adding buttermilk and flour into the creamed mixture. Begin and end with flour.Beat well.
  • Step 5
    Add nuts and mix well.
  • Step 6
    Pour into a large tube pan that has been greased and floured, Bake at 350* oven for 1hr.Cool in pan 10-15mins. then turn out onto serving piece.
