You will need a tube pan for this recipe. This cake is very dense and has spices generally used for fall/winter foods so I usually make this around the holidays. Everyone enjoys this cake; it disappears quickly!If you prefer an iced cake, try it with a caramel icing!

Ingredients

1 c
butter, softened
2 c
sugar
4 large
eggs
3 c
all purpose flour
1/2 tsp
salt
1/2 c
walnuts, chopped
2 c
sweet potatoes, mashed
1 tsp
vanilla extract
1 tsp
nutmeg
1 tsp
cinnamon
1 tsp
allspice
1/2 tsp
baking soda
1 tsp
baking powder
3/4 c
buttermilk

Step-By-Step

1Cream butter and sugar well.
2Beat in eggs; one at a time.
3Add sweet potatoes, vanilla and spices to the creamed mixture and beat well.
4Incorporate salt, soda and baking powder into flour. Alternate adding buttermilk and flour into the creamed mixture. Begin and end with flour.Beat well.
5Add nuts and mix well.
6Pour into a large tube pan that has been greased and floured, Bake at 350* oven for 1hr.Cool in pan 10-15mins. then turn out onto serving piece.
