You will need a tube pan for this recipe. This cake is very dense and has spices generally used for fall/winter foods so I usually make this around the holidays. Everyone enjoys this cake; it disappears quickly!If you prefer an iced cake, try it with a caramel icing!

Ingredients

butter, softened
2 c
sugar
4 large
eggs
3 c
all purpose flour
1/2 tsp
salt
1/2 c
walnuts, chopped
2 c
sweet potatoes, mashed
1 tsp
vanilla extract
1 tsp
nutmeg
1 tsp
cinnamon
1 tsp
allspice
1/2 tsp
baking soda
1 tsp
baking powder
3/4 c
buttermilk

How to Make Sweet Potato Cake

Step-by-Step

  • 1Cream butter and sugar well.
  • 2Beat in eggs; one at a time.
  • 3Add sweet potatoes, vanilla and spices to the creamed mixture and beat well.
  • 4Incorporate salt, soda and baking powder into flour. Alternate adding buttermilk and flour into the creamed mixture. Begin and end with flour.Beat well.
  • 5Add nuts and mix well.
  • 6Pour into a large tube pan that has been greased and floured, Bake at 350* oven for 1hr.Cool in pan 10-15mins. then turn out onto serving piece.
