sweet potato brownies

I got this recipe from a friend a few years ago and finally made it last month! This is an incredible dessert or even sweet breakfast. I highly recommend this for Thanksgiving or Christmas!

Ingredients

  • 1 cup butter, room temperature
  • 1 cup brown sugar, lightly packed
  • 1 cup white sugar
  • 4 - eggs
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups sweet potatoes - skinned & mashed
  • ICING
  • 1 cup confectioners' sugar
  • 2 tablespoons milk, 2%
  • 2 tablespoons butter, melted

How To Make sweet potato brownies

  • Step 1
    **Preheat oven to 350 In large bowl, blend together: butter, brown & white sugar till smooth. Mix in eggs, 1 at a time. Then vanilla. In seperate bowl, mix: flour, baking powder & salt. Add flour to wet mix slowly till blended.. fold in sweet potatos. (optional) Line pan with parchment paper pour into 13x9x2in pan Bake for 30 minutes or so..
  • Step 2
    Icing Melt butter, mix into milk & sugar. Spread on top of warm brownies.
  • Step 3
    Enjoy right away or once cool
