sweet potato brownies
I got this recipe from a friend a few years ago and finally made it last month! This is an incredible dessert or even sweet breakfast. I highly recommend this for Thanksgiving or Christmas!

Ingredients
- 1 cup butter, room temperature
- 1 cup brown sugar, lightly packed
- 1 cup white sugar
- 4 - eggs
- 2 teaspoons pure vanilla extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups sweet potatoes - skinned & mashed
- ICING
- 1 cup confectioners' sugar
- 2 tablespoons milk, 2%
- 2 tablespoons butter, melted

Step 1**Preheat oven to 350 In large bowl, blend together: butter, brown & white sugar till smooth. Mix in eggs, 1 at a time. Then vanilla. In seperate bowl, mix: flour, baking powder & salt. Add flour to wet mix slowly till blended.. fold in sweet potatos. (optional) Line pan with parchment paper pour into 13x9x2in pan Bake for 30 minutes or so..

Step 2Icing Melt butter, mix into milk & sugar. Spread on top of warm brownies.
