sweet potato and walnut cheesecake

This is like a sweet potato pie married a creamy cheesecake and had a delicious baby lol!

Ingredients

  • 16 ounces cream cheese, room temperature
  • 3/4 cup mashed canned sweet potato
  • 1/4 cup white sugar
  • 1/4 cup splenda...may be substituted for white sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest, grated
  • 2 - eggs
  • 1/2 cup toasted walnuts
  • 6oz packages prepared graham cracker pie crust

How To Make sweet potato and walnut cheesecake

  • Step 1
    preheat oven to 350' while oven is preheating you can put your walnuts on a cookie sheet and let them toast so they are ready when your cheesecake filling is ready
  • Step 2
    in a blender combine sugars, cream cheese,(drained and mashed) sweet potato, pumpkin pie spice, vanilla, and eggs. mix until thoroughly combined, I usually stick a spatula in the blender and scrape down the sides just in case.
  • Step 3
    sprinkle toasted walnuts into pie shell, and then pour in your sweet potato cheesecake filling. bake for 40 min. cool on counter for 2hrs and then refrigerate
