Ingredients
- 16 ounces cream cheese, room temperature
- 3/4 cup mashed canned sweet potato
- 1/4 cup white sugar
- 1/4 cup splenda...may be substituted for white sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest, grated
- 2 - eggs
- 1/2 cup toasted walnuts
- 6oz packages prepared graham cracker pie crust
How To Make sweet potato and walnut cheesecake

Step 1preheat oven to 350' while oven is preheating you can put your walnuts on a cookie sheet and let them toast so they are ready when your cheesecake filling is ready

Step 2in a blender combine sugars, cream cheese,(drained and mashed) sweet potato, pumpkin pie spice, vanilla, and eggs. mix until thoroughly combined, I usually stick a spatula in the blender and scrape down the sides just in case.

Step 3sprinkle toasted walnuts into pie shell, and then pour in your sweet potato cheesecake filling. bake for 40 min. cool on counter for 2hrs and then refrigerate
