sweet essentials: danish dream cake
This is an awesome, heavenly cake. It has a spongelike base that soaks in the topping and really makes this cake irresistible. There are a few steps that make it a success, but it is not rocket science. It is a great holiday dessert, but it works any old time of the year. I do not have photos of the prep process, but the final image says it all. Great presentation, and great flavor. Note: I do make several of these over the holidays, and will try to take prep photos and add them to this recipe. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE CAKE
- 4 large eggs
- 1 1/2 cups granulated sugar
- 3 1/2 tablespoons sweet butter, unsalted
- 3/4 cup whole milk
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon vanilla extract
- THE COCONUT TOPPING
- 10 tablespoons sweet butter, unsalted
- 1 3/4 cups coconut sugar
- 1/2 cup granulated sugar
- 3 teaspoons vanilla extract
- 1/2 cup whole milk
- 2 1/2 cups shredded coconut, unsweetened

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3The Cake

Step 4Place a rack in the lower position, and preheat the oven to 400 F/205 C.

Step 5In a blender fitted with a whisk attachment, or using a stick blender, whisk the eggs and sugar until they are light and fluffy.

Step 6This step is important. You need to get as much air into the mixture as possible.

Step 7In a small saucepan, melt the butter, and then combine it with the milk. Do not let it boil, just get it warm enough to melt the butter.

Step 8In a separate bowl, mix the dry ingredients together, then carefully add them to the fluffy egg mixture.

Step 9Carefully fold the ingredients together. You want them blended, but you want to lose as little of the fluffy air that was beaten into the egg/sugar mixture as possible.

Step 10Add the milk/butter and fold carefully.

Step 11Add the batter to a buttered cake pan with high sides.

Step 12I am using an 8-inch pan with 2.5-inch sides, and it worked perfectly.

Step 13Bake in the preheated oven for 18 – 20 minutes or until a toothpick inserted into the center of the cake comes out clean. The top should be a nice golden brown.

Step 14While the cake is baking, make the topping (recipe to follow).

Step 15Pour the topping over the cake and smooth it out.

Step 16Place back into the oven, and bake until the topping is bubbling, about 5 – 7 minutes.

Step 17Allow to cool in the cake pan before removing.

Step 18The Coconut Topping (prepare while the cake is baking)

Step 19Melt the butter in a small saucepan over medium-low heat.

Step 20After the butter melts, remove from the heat, add the sugars (brown and white) and vanilla, then stir.

Step 21Add the milk and coconut, then stir to combine.

Step 22PLATE/PRESENT

Step 23Remove from the oven, slice, and serve. Enjoy
