My daughter Becky received this great cookbook from our friend, Mary Johnson. This was the first recipe she made out of it... and it was definite hit!

Ingredients

  • 2 c
    flour
  • 2 c
    sugar
  • 1 can(s)
    crushed pineapple with juice (20 oz. can)
  • 1 tsp
    baking soda
  • 1 tsp
    vanilla
  • 1/2 c
    chopped pecans
  • 1 stick
    margarine, melted
  • 8 oz
    cream cheese, softened
  • 2 c
    powdered sugar

How to Make Swedish Pineapple Cake

Step-by-Step

  1. In a mixing bowl, combine first six ingredients, mix well.
  2. Spray a 13" x 9" pan with vegetable spray. Pour batter into pan and bake in a preheated oven at 350 degrees for about 40 minutes or until done.
  3. For frosting, in a mixing bowl combine melted margarine, softened cream cheese and powdered sugar. Mix well then spread frosting over warm cake.
