My daughter Becky received this great cookbook from our friend, Mary Johnson. This was the first recipe she made out of it... and it was definite hit!

Ingredients

2 c
flour
2 c
sugar
1 can(s)
crushed pineapple with juice (20 oz. can)
1 tsp
baking soda
1 tsp
vanilla
1/2 c
chopped pecans
1 stick
margarine, melted
8 oz
cream cheese, softened
2 c
powdered sugar

How to Make Swedish Pineapple Cake

Step-by-Step

  • 1In a mixing bowl, combine first six ingredients, mix well.
  • 2Spray a 13" x 9" pan with vegetable spray. Pour batter into pan and bake in a preheated oven at 350 degrees for about 40 minutes or until done.
  • 3For frosting, in a mixing bowl combine melted margarine, softened cream cheese and powdered sugar. Mix well then spread frosting over warm cake.
