This is a great variation on the traditional rum cake! It is rich and smooth with deep citrus flavor. And the flavored buttercream frosting is an added treat!

Ingredients
- 1 - box of yellow cake mix
- 1 - small box of instant lemon pudding
- 4 - eggs
- 1/2 cup cold water
- 1/2 cup vegetable oil
- 1/2 cup light rum
- 1/2 cup butter flavor shortening
- 1/2 cup unsalted butter
- 1 teaspoon orange extract
- 4 cups confectioner's sugar (sifted)
- 2 tablespoons evaporated milk
- 3 tablespoons light corn syrup
- 1 - thin sliced orange/lemon (garnish)
How To Make sunshine layer cake

Step 1Preheat oven to 350 degrees.

Step 2Grease & flour 2 8" cake pans.

Step 3Mix together: cake mix, pudding, eggs, water, oil and rum.

Step 4Pour batter into pans and bake for 55 - 60 minutes.

Step 5On medium speed, cream shortening, butter and sugar together.

Step 6Add orange extract.

Step 7Gradually add sugar, 1/2 cup at a time until all the sugar has been incorporated.

Step 8Slowly begin to add milk and corn syrup.

Step 9On high speed, beat until fluffy.

Step 10Refrigerate frosting until cakes have cooled, crumbs have been dusted off and the cake is ready to frost.

Step 11Garnish cake with thin slices of oranges/lemons!
