This is a great variation on the traditional rum cake! It is rich and smooth with deep citrus flavor. And the flavored buttercream frosting is an added treat!

Ingredients

  • 1 - box of yellow cake mix
  • 1 - small box of instant lemon pudding
  • 4 - eggs
  • 1/2 cup cold water
  • 1/2 cup vegetable oil
  • 1/2 cup light rum
  • 1/2 cup butter flavor shortening
  • 1/2 cup unsalted butter
  • 1 teaspoon orange extract
  • 4 cups confectioner's sugar (sifted)
  • 2 tablespoons evaporated milk
  • 3 tablespoons light corn syrup
  • 1 - thin sliced orange/lemon (garnish)

How To Make sunshine layer cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Grease & flour 2 8" cake pans.
  • Step 3
    Mix together: cake mix, pudding, eggs, water, oil and rum.
  • Step 4
    Pour batter into pans and bake for 55 - 60 minutes.
  • Step 5
    On medium speed, cream shortening, butter and sugar together.
  • Step 6
    Add orange extract.
  • Step 7
    Gradually add sugar, 1/2 cup at a time until all the sugar has been incorporated.
  • Step 8
    Slowly begin to add milk and corn syrup.
  • Step 9
    On high speed, beat until fluffy.
  • Step 10
    Refrigerate frosting until cakes have cooled, crumbs have been dusted off and the cake is ready to frost.
  • Step 11
    Garnish cake with thin slices of oranges/lemons!
