Well here we go!!! This sounds like the PERFECT PEACH CAKE ever. This is straight out of the June/July issue of "Looking Back" Magazine, Page 21. I simply can't wait for fresh peach season. We have several orchards that sell to the public at the local farmers market.

Ingredients
- 2 1/4 cups flour
- 1 1/3 cups plus 2 tbsp sugar, divided
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup vegetable shortening
- 2 - eggs, i would use large
- 1/2 cup milk
- 1 teaspoon vanilla
- 5 - unpeeled peaches, sliced 3/4 inch thick
- 1/4 teaspoon cinnamon
How To Make summer peach cake

Step 1Preheat oven to 350* Grease and flour a 10-inch tube pan.

Step 2Combine flour, 1 1/3 cups sugar, baking powder and salt.

Step 3Add shortening, eggs, milk and vanilla, and mix to make thick batter.

Step 4Spoon into prepared tube pan.

Step 5Arrange peach slices on top of batter in neat rows

Step 6Blend remaining 2 TBSP. sugar with the cinnamon; sprinkle this mixture over peach slices.

Step 7Bake for 45 minutes. Serves 8 to 10.
