Well here we go!!! This sounds like the PERFECT PEACH CAKE ever. This is straight out of the June/July issue of "Looking Back" Magazine, Page 21. I simply can't wait for fresh peach season. We have several orchards that sell to the public at the local farmers market.

1 1/3 c
plus 2 tbsp sugar, divided
3 tsp
baking powder
1 tsp
1/2 c
vegetable shortening
eggs, i would use large
1/2 c
1 tsp
unpeeled peaches, sliced 3/4 inch thick
1/4 tsp

How to Make Summer Peach Cake


  • 1Preheat oven to 350* Grease and flour a 10-inch tube pan.
  • 2Combine flour, 1 1/3 cups sugar, baking powder and salt.
  • 3Add shortening, eggs, milk and vanilla, and mix to make thick batter.
  • 4Spoon into prepared tube pan.
  • 5Arrange peach slices on top of batter in neat rows
  • 6Blend remaining 2 TBSP. sugar with the cinnamon; sprinkle this mixture over peach slices.
  • 7Bake for 45 minutes. Serves 8 to 10.
