Well here we go!!! This sounds like the PERFECT PEACH CAKE ever. This is straight out of the June/July issue of "Looking Back" Magazine, Page 21. I simply can't wait for fresh peach season. We have several orchards that sell to the public at the local farmers market.

  • 2 1/4 c
  • 1 1/3 c
    plus 2 tbsp sugar, divided
  • 3 tsp
    baking powder
  • 1 tsp
  • 1/2 c
    vegetable shortening
  • 2
    eggs, i would use large
  • 1/2 c
  • 1 tsp
  • 5
    unpeeled peaches, sliced 3/4 inch thick
  • 1/4 tsp

How to Make Summer Peach Cake


  1. Preheat oven to 350* Grease and flour a 10-inch tube pan.
  2. Combine flour, 1 1/3 cups sugar, baking powder and salt.
  3. Add shortening, eggs, milk and vanilla, and mix to make thick batter.
  4. Spoon into prepared tube pan.
  5. Arrange peach slices on top of batter in neat rows
  6. Blend remaining 2 TBSP. sugar with the cinnamon; sprinkle this mixture over peach slices.
  7. Bake for 45 minutes. Serves 8 to 10.
