sugar cookie cupcakes

I love sugar cookies and I love cupcakes. So how can you go wrong with a Sugar Cookie Cupcake!? I figured it would taste like a sugar cookie but I was so surprised that it actually looked like a sugar cookie. This has quickly become one of my favorite cupcake recipes Enjoy!

Ingredients

  • 2 cups sugar
  • 3 cups flour (all purpose)
  • 1 cup butter, softened
  • 1 teaspoon baking soda
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • - colored sugar sprinkles (optional)

How To Make sugar cookie cupcakes

  • Step 1
    Preheat oven to 350 degrees. Line or spray muffin tin with non stick spray. This will make at least 24 cupcakes.
  • Step 2
    Mix flour, sugar and butter to form crumbs. Reserve 1 cup for topping.
  • Step 3
    Add baking soda, buttermilk, eggs and vanilla extract to remaining flour/sugar mixture and mix thoroughly
  • Step 4
    Fill lined/sprayed muffin tin 2/3 full. (I used an ice cream scooper. Made filling the cups very easy and quick)
  • Step 5
    Sprinkle reserved crumbs on top of each cupcake. You can sprinkle with colored sugar to decorate for the occasion or leave plain
  • Step 6
    Bake at 350 degrees for 20-23 minutes or until inserted toothpick comes out clean. Cool in pan for 10 minutes before moving to a wire rack to cool completely
