I found this recipe last year for Sugar Cookie Cake. When I read the ingredients, I knew I just HAD to make it. It is really easy and I just love that it has fresh, sweetened fruit in it. I used the blueberries we hand picked ourselves....OM"Goodness!" Don't you just wish you could reach into your monitor and take a bite? Mmmmmm....so delicious!

Ingredients

  • 3/4 cup cold butter
  • 2 cups sugar
  • 3 cups flour
  • 1 1/2 cups buttermilk
  • 1 teaspoon baking soda
  • 2 - eggs, beaten
  • 1 teaspoon vanilla
  • 8 oz - container of whipped topping
  • 12 oz - milk
  • - blueberries, or fruit of choice

How To Make sugar cookie cake

  • Step 1
    Cut cold butter into flour and sugar till resembles coarse crumbs. Reserve 1 - 1 1/2 cups of crumbs for top of cake
  • Step 2
    Mix buttermilk and baking soda together and add to remaining crumb mixture.
  • Step 3
    Add beaten eggs and vanilla and mix till combined.
  • Step 4
    Pour into greased 9x13 in baking pan and sprinkle with reserved crumbs.
  • Step 5
    Bake at 350*F for 35-40 minutes, or until cake tester comes out clean. Cool completely.
  • Step 6
    Combine vanilla pudding and milk in bowl. Mix until it starts to thicken. Fold in whipped topping till creamy.
  • Step 7
    Divide cake into squares, cutting each piece horizontally. Put a spoonful of pudding mixture and a spoonful of fruit on bottom. Put top on and repeat. ENJOY!
