sugar cookie cake
I found this recipe last year for Sugar Cookie Cake. When I read the ingredients, I knew I just HAD to make it. It is really easy and I just love that it has fresh, sweetened fruit in it. I used the blueberries we hand picked ourselves....OM"Goodness!" Don't you just wish you could reach into your monitor and take a bite? Mmmmmm....so delicious!

Ingredients
- 3/4 cup cold butter
- 2 cups sugar
- 3 cups flour
- 1 1/2 cups buttermilk
- 1 teaspoon baking soda
- 2 - eggs, beaten
- 1 teaspoon vanilla
- 8 oz - container of whipped topping
- 12 oz - milk
- - blueberries, or fruit of choice
How To Make sugar cookie cake

Step 1Cut cold butter into flour and sugar till resembles coarse crumbs. Reserve 1 - 1 1/2 cups of crumbs for top of cake

Step 2Mix buttermilk and baking soda together and add to remaining crumb mixture.

Step 3Add beaten eggs and vanilla and mix till combined.

Step 4Pour into greased 9x13 in baking pan and sprinkle with reserved crumbs.

Step 5Bake at 350*F for 35-40 minutes, or until cake tester comes out clean. Cool completely.

Step 6Combine vanilla pudding and milk in bowl. Mix until it starts to thicken. Fold in whipped topping till creamy.

Step 7Divide cake into squares, cutting each piece horizontally. Put a spoonful of pudding mixture and a spoonful of fruit on bottom. Put top on and repeat. ENJOY!
