I found this recipe last year for Sugar Cookie Cake. When I read the ingredients, I knew I just HAD to make it. It is really easy and I just love that it has fresh, sweetened fruit in it. I used the blueberries we hand picked ourselves....OM"Goodness!" Don't you just wish you could reach into your monitor and take a bite? Mmmmmm....so delicious!

Ingredients

3/4 c
cold butter
2 c
sugar
3 c
flour
1 1/2 c
buttermilk
1 tsp
baking soda
2
eggs, beaten
1 tsp
vanilla
8 oz
container of whipped topping
12 oz
milk
blueberries, or fruit of choice

How to Make Sugar Cookie Cake

Step-by-Step

  • 1Cut cold butter into flour and sugar till resembles coarse crumbs. Reserve 1 - 1 1/2 cups of crumbs for top of cake
  • 2Mix buttermilk and baking soda together and add to remaining crumb mixture.
  • 3Add beaten eggs and vanilla and mix till combined.
  • 4Pour into greased 9x13 in baking pan and sprinkle with reserved crumbs.
  • 5Bake at 350*F for 35-40 minutes, or until cake tester comes out clean. Cool completely.
  • 6Combine vanilla pudding and milk in bowl. Mix until it starts to thicken. Fold in whipped topping till creamy.
  • 7Divide cake into squares, cutting each piece horizontally. Put a spoonful of pudding mixture and a spoonful of fruit on bottom. Put top on and repeat. ENJOY!
