I got this from a recipe book that a church put together. I like it this way, but have thought about adding some berries or fruit to it.

Ingredients For streusel filled coffee cake

  • 1 1/2 c
    all purpose flour
  • 3 tsp
    baking powder
  • 1/2 tsp
    salt
  • 3/4 c
    sugar
  • 1/4 c
    shortening (or butter)
  • 1
    egg, beaten
  • 1/2 c
    milk
  • 1 tsp
    vanilla
  • STREUSEL
  • 3/4 c
    brown sugar
  • 2 Tbsp
    flour
  • 2 tsp
    cinnamon
  • 2 Tbsp
    melted butter
  • 1/2 c
    chopped pecans, optional

How To Make streusel filled coffee cake

    Preheat oven to 375 degrees.

    For the streusel; Mix all ingredients together. It will be crumbly.

    Sift together flour, baking powder, sugar and salt.
  • 4
    Cut in shortening (or butter)until it looks like coarse meal.
  • 5
    Mix together egg, milk and vanilla and stir into flour mixture. Blend well.

    Pour half of batter into a well greased 8 x 8 in pan.

    Sprinkle with half of streusel mixture.

    Add rest of batter, then sprinkle the rest of the streusel mixture on top.

    Bake 25-30 minutes.
