streusel blueberry muffins
This delicious muffin recipe can be alternately used to make a cake if desired. Or use to make mini muffins. Very easy to make and the topping compliments the fresh blueberries.

Ingredients
- 3 tablespoons vegetable shortening
- 1 cup sugar
- 1 large egg
- 1¾ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk
- 1½ cups blueberries, fresh
How To Make streusel blueberry muffins

Step 1Make streusel topping by mixing together with a spoon ½ cup flour, ½ cup sugar, 1 tsp cinnamon and 2 tbsp soft butter. Set aside.

Step 2Cream shortening with sugar. Beat in egg.

Step 3Sift flour, baking power and salt together. Add milk.

Step 4Sprinkle the blueberries with flour and stir into the batter.

Step 5Using 12 to 18 muffin tin, pour batter into each cavity.

Step 6Sprinkle streusel topping made in step 1 onto batter.

Step 7Bake at 350° F for 25 - 30 minutes
