this is a recent on-line recipe that I haven't had time to make yet but I am going to take it to our next church dinner.

Ingredients

2 cups mini-marshmallows
2 cups sliced strawberries
1 - ( 3 oz. box ) strawberry gelatin, dry
2 1/2 cups all-purpose flour
1/2 teaspoon salt
3 teaspoons baking powder
3 - eggs
1 stick margarine
1 cup sugar
1 cup milk
1 teaspoon vanilla extract

How To Make strawberry surprise cake

Step 1

Mix strawberries and dry gelatin together ( juice and all ); set aside.

Step 2

Grease 13x9" pan or spray with non-stick coating.
Step 3

Spread marshmallows evenly in pan.
Step 4

In mixer bowl mix sugar and margarine; add eggs and vanilla and beat well.
Step 5

Add dry ingredients alternately with milk; beat well. Mixture will be stiff.
Step 6

Carefully spoon over marshmallows; spread gently. Spoon strawberry mix over top of batter.
Step 7

Bake at 350° F. for 30 minutes, then at 300°F. for 20 minutes. ( strawberries will sink and marshmallows will come to the top.)
