Ingredients
- CAKE:
- 1 - egg
- 1/2 cup butter, melted
- 1 cup sugar
- 1/2 cup brown sugar, firmly packed
- 1 cup sour cream, fat-free
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 pinch salt
- 1 1/2 cups rhubarb, finely diced
- 1 quart strawberries, fresh, cleaned, and sliced
- TOPPING:
- 1/4 cup sugar
- 1/4 cup brown sugar, firmly packed
- 1/2 teaspoon cinnamon
- 1/2 cup oatmeal, uncooked
- 1/2 cup butter, room temperature
How To Make strawberry rhubarb cake

Step 1Beat egg, sugar, and melted butter. Add sour cream and vanilla and mix.

Step 2Add flour, baking soda and salt. Beat together.

Step 3Fold in rhubarb and strawberries. Pour into greased and floured 9 x 13 pan.

Step 4Combine topping ingredients and sprinkle over top of cake.

Step 5Bake at 350 degrees for 25 - 30 mins.
