This cake is really moist. One of my family's favorite.

Ingredients

  • CAKE:
  • 1 - egg
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 1 cup sour cream, fat-free
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 1/2 cups rhubarb, finely diced
  • 1 quart strawberries, fresh, cleaned, and sliced
  • TOPPING:
  • 1/4 cup sugar
  • 1/4 cup brown sugar, firmly packed
  • 1/2 teaspoon cinnamon
  • 1/2 cup oatmeal, uncooked
  • 1/2 cup butter, room temperature

How To Make strawberry rhubarb cake

  • Step 1
    Beat egg, sugar, and melted butter. Add sour cream and vanilla and mix.
  • Step 2
    Add flour, baking soda and salt. Beat together.
  • Step 3
    Fold in rhubarb and strawberries. Pour into greased and floured 9 x 13 pan.
  • Step 4
    Combine topping ingredients and sprinkle over top of cake.
  • Step 5
    Bake at 350 degrees for 25 - 30 mins.
