  • CAKE:

  • 1
  • 1/2 c
    butter, melted
  • 1 c
  • 1/2 c
    brown sugar, firmly packed
  • 1 c
    sour cream, fat-free
  • 1 tsp
    vanilla extract
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 pinch
  • 1 1/2 c
    rhubarb, finely diced
  • 1 qt
    strawberries, fresh, cleaned, and sliced

  • 1/4 c
  • 1/4 c
    brown sugar, firmly packed
  • 1/2 tsp
  • 1/2 c
    oatmeal, uncooked
  • 1/2 c
    butter, room temperature

How to Make Strawberry Rhubarb Cake


  1. Beat egg, sugar, and melted butter. Add sour cream and vanilla and mix.
  2. Add flour, baking soda and salt. Beat together.
  3. Fold in rhubarb and strawberries. Pour into greased and floured 9 x 13 pan.
  4. Combine topping ingredients and sprinkle over top of cake.
  5. Bake at 350 degrees for 25 - 30 mins.
