This is from Gramma's ziplock bag. It sounds like a wonderful addition to any Angel food cake, homemade or store bought. Enjoy~

Ingredients

  • 2 - envelopes unflavored gelatin (2 tablespoons)
  • 1/2 cup cold water
  • 1/2 cup sugar
  • - few grains of salt
  • 2 cups slightly crushed fresh strawberries, including juice
  • 2 tablespoons lemon juice
  • 1 cup whipping cream, whipped
  • FOR SIDES OF CAKE
  • 2 cups whipping cream
  • 1/4 cup powdered sugar, sifted
  • - enough whole strawberries for garnish

How To Make strawberry filling for angel food cake

  • Step 1
    Combine slightly crushed strawberries with lemon juice, set aside.
  • Step 2
    Soften gelatin in cold water. Place over boiling water and stir until gelatin is dissolved. Add sugar and salt, stir until sugar is dissolved. Gradually add gelatin mixture to strawberries, blending lightly, but thoroughly.
  • Step 3
    Chill until mixture is slightly thicker than the consistency of unbeaten egg white. Fold in cream. Chill until partly set.
  • Step 4
    Invert cooled angel food cake on a large serving plate. Fill center - thickly cover top - with partly set Strawberry Filling. Chill at least 2 hours. Whip 2 cups of whipping cream with 1/4 cup sifted powdered sugar. Swirl sweetened whipped cream generously over sides of cake. Chill at least 4 hours, garnish with whole strawberries. Enjoy~
