Easy as pie, because it uses a cake mix! You can easily substitute other fruits for the strawberries, including canned pie fillings. Sometimes it's easier to combine the three milks before pouring over the cake - as it seems to absorb easier. I left the recipe as written. In the past, my niece made it with a thin layer of apple pie filling and substituted a light sprinkling of cinnamon sugar for the coconut. Yum!

- FOR THE CAKE:

1 boxyellow cake mix (15.25 oz)

1 3/4 csweetened condensed milk (14 oz)

1 1/2 cevaporated milk (12 oz)

1/2 chalf and half, or whole milk
- FOR THE TOPPING:

2 cwhipping cream
-
1/3 csugar
-
1 tspvanilla extract

2 cfresh strawberries, sliced

1 csweetened coconut, toasted

1Prepare the yellow cake according to package directions in a 13-by-9-inch baking dish.

2When cake is slightly cool, poke holes evenly over the surface with a toothpick or skewer. Pour each of the three milks slowly over the top. Allow each to absorb into the cake. Cover and refrigerate overnight.

3In a medium bowl, whip the cream using a mixer. Slowly add in the sugar and vanilla. Set aside.

4Layer the berries on top of the cake. Cover with whipped cream and sprinkle with coconut
