strawberry cake mix (+eggs and oil for recipe)

FROSTING

1/4 stick
butter, softened
1/2 pkg
cream cheese, softened
1/2 tsp
pure vanilla extract
1-2 c
powdered sugar

TOPPING

mini chocolate chips
shredded coconut, sweetened

How to Make Strawberry-Coconut/Chocolate Cupcakes

Step-by-Step

  • 1Prepare strawberry cupcakes as directed; cool.
  • 2Mix butter and cream cheese until well mixed; add vanilla. Slowly add powered sugar about 1/4 cup at a time until frosting reaches desired thickness/stiffness.
  • 3Pour mini chocolate chips and coconut into separate plates.Lightly frost cooled cupcakes; dip frosted cupcakes into either the chocolate chips or coconut - roll cupcakes in toppings until well covered.
