strawberry cheesecake

I came across this recipe while looking through a cookbook my aunt made for me as a wedding gift . Not only is this cheesecake really yummy . But its also my husband's and a really good friend of mines favorite as well . Lets just say if i tell her i am making a cheesecake she runs right over for a piece its that good she tells me :)

Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 1 1/4 cups sugar , divided
  • 3 packages cream cheese softened ( u may use what ever kind of cream cheese that your local store carries ) i use philadelphia cream cheese
  • 2 teaspoons pure vanilla extract
  • 3 - eggs
  • 1 cup sour cream ( i use daisiy or hellava good sour cream )
  • 1 can strawberry pie filling ( or u can make your own strawberry topping yourself with fresh strawberries)

How To Make strawberry cheesecake

  • Step 1
    Preheat your oven to 350 degrees
  • Step 2
    In a med. size bowl mix your graham cracker crumbs , the melted butter and 1/4 cup of your sugar . press firmly into the bottom of your springform pan and about 2 1/2 inches up the side of the pan , place into your freezer for a few minutes .
  • Step 3
    Beat your cream cheese remaining 1 cup of sugar and the vanilla in a large bowl with a electric mixer on high speed until well blended . add your eggs 1 at a time mixing on a low speed after each egg just until blended add your sour cream . pour into your crust .
  • Step 4
    Bake for 1 hour and 10 minutes for until the center is almost set ( i put foil around my springform pan and bake my cheesecake in a water bath so it won't crack ) . turn off your oven leaving your door slightly ajar leave cheesecake in the oven for 1 hour remove from the oven and cool on a wire rack . place into your refrigerator for 4 hours remove your side of the pan and top it with your pie filling enjoy :)
