A slick trick--a super dessert! Be ready to serve seconds--you'll have request. One of my children's birthday is late in July,and we'd celebrate her birthday on the beach. Nothing left to pack up. Very cheap to make.

Ingredients
- 1 - jelly roll homemade or commercial
- 1 package ( 3 ounces) strawberry flavored gelatin powder
- 1 cup hot water
- 1 cup miniature marshmallows
- 10 ounces strawberries frozen ( and fresh for garnish )
- - ** fresh is easy to work with to make the outside pretty
- 1/4 cup lemon juice
- 2 - each egg whites
- 1/4 cup sugar
- 1 cup heavy whipping cream ( whipped )
- 1 cup pecans ( coarsely broken )
How To Make strawberry charlotte

Step 1Cut jelly roll into 1/2-inch slices.

Step 2Arrange slices over bottom and around sides of oiled 2 1/2-quart mixing bowl.

Step 3Dissolve gelatin in hot water.

Step 4Add marshmallows and partially defrosted strawberries,stirring until marshmallows dissolve.

Step 5Add lemon juice and chill until partially congealed.

Step 6Beat until fluffy.

Step 7Beat egg whites until soft peaks form. Gradually beat in sugar.

Step 8Fold into gelatin mixture. Blend in whipped cream and nuts.

Step 9Pile mixture lightly into jelly roll-lined mold.

Step 10Chill until firm. Unmold and garnish and serve.

Step 11It's pretty - tasty - and is still remembered for forty plus years.
