A slick trick--a super dessert! Be ready to serve seconds--you'll have request. One of my children's birthday is late in July,and we'd celebrate her birthday on the beach. Nothing left to pack up. Very cheap to make.

Ingredients

  • 1 - jelly roll homemade or commercial
  • 1 package ( 3 ounces) strawberry flavored gelatin powder
  • 1 cup hot water
  • 1 cup miniature marshmallows
  • 10 ounces strawberries frozen ( and fresh for garnish )
  • - ** fresh is easy to work with to make the outside pretty
  • 1/4 cup lemon juice
  • 2 - each egg whites
  • 1/4 cup sugar
  • 1 cup heavy whipping cream ( whipped )
  • 1 cup pecans ( coarsely broken )

How To Make strawberry charlotte

  • Step 1
    Cut jelly roll into 1/2-inch slices.
  • Step 2
    Arrange slices over bottom and around sides of oiled 2 1/2-quart mixing bowl.
  • Step 3
    Dissolve gelatin in hot water.
  • Step 4
    Add marshmallows and partially defrosted strawberries,stirring until marshmallows dissolve.
  • Step 5
    Add lemon juice and chill until partially congealed.
  • Step 6
    Beat until fluffy.
  • Step 7
    Beat egg whites until soft peaks form. Gradually beat in sugar.
  • Step 8
    Fold into gelatin mixture. Blend in whipped cream and nuts.
  • Step 9
    Pile mixture lightly into jelly roll-lined mold.
  • Step 10
    Chill until firm. Unmold and garnish and serve.
  • Step 11
    It's pretty - tasty - and is still remembered for forty plus years.
