strawberry celebration cake

This was one of my Grandmother's recipes. My family really enjoys it and it is a great way to use up those summer strawberries!

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 3 - eggs (separated)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 2 cups whipping cream
  • 1/4 cup confectioners sugar
  • 2 cups sliced sweetened fresh strawberries
  • 24 - whole fresh strawberries

How To Make strawberry celebration cake

  • Step 1
    Preheat the oven to 350 degrees.
  • Step 2
    FOR CAKE: Cream Butter, gradually add granulated sugar and beat until fluffy. Beat in Egg Yolks and Vanilla.
  • Step 3
    Combine dry ingredients. Add alternately with milk beginning and ending with dry ingredients; beat well after each addition.
  • Step 4
    Beat egg whites until stiff. Gently fold egg whites into cake mixture.
  • Step 5
    Divide batter evenly between two buttered and floured 9 inch round cake pans.
  • Step 6
    Bake until wooden pick inserted in center comes out clean, about 20-25 minutes. Cool in pan 10 minutes. Remove from pans and cool completely on wire racks. To serve cut each layer in half horizontally.
  • Step 7
    FOR FILLING: Whip cream until soft peaks form; add Confectioner's sugar. Continue beating until stiff. Place one cut layer on serving plate.
  • Step 8
    Spread 1 cup whipped cream and a third of the sliced strawberries over cut surface. Place another cake layer over filling. Repeat twice.
  • Step 9
    For top of cake, spread with whipped cream as before. Arrange whole strawberries over top.
  • Step 10
    Refrigerate up to 1 hour before serving.
