strawberry cake from scratch
I thought this was the only cake that could be called birthday cake until I was about 6 yrs old! Easy and tasty. This is a densely textured cake. The timing for mixing the cake and frosting is essential. Real butter for the frosting is a must!

Ingredients
- 16 oz packages pre sweetened frozen strawberries (thawed drain and reserve juice)
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups sugar
- 1/2 cup shortening
- 3 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- FROSTING
- 3 tablespoons flour
- 1/2 cup shortening
- 1/2 cup butter
- 1 1/2 cups powdered sugar
- 1/2 cup reserved berry juice
- 1 teaspoon vanilla extract
- 1 pinch salt
How To Make strawberry cake from scratch

Step 1For Cake: preheat oven to 350 degrees bake time 30-40 minutes. Grease and flour 2 nine inch round cake pans or one 9x13 sheet cake pan.

Step 2Sift together flour, baking soda, sugar and salt. In lg mixing bowl add shortening, sour cream, eggs and vanilla. Beat on low speed 3 minutes then 3 minutes on medium speed, scrap bowl frequently.

Step 3Fold in drained berries. Pour into prepared pans. bake 30-40 min or until done. (springs back when touched in middle or toothpick comes out clean)

Step 4For frosting: Combine all ingredients in mixer bowl. Beat on medium - high speed 7-10 minutes or until desired consistency.
