I thought this was the only cake that could be called birthday cake until I was about 6 yrs old! Easy and tasty. This is a densely textured cake. The timing for mixing the cake and frosting is essential. Real butter for the frosting is a must!

Ingredients

16 oz pkg
pre sweetened frozen strawberries (thawed drain and reserve juice)
2 c
all purpose flour
1 tsp
baking soda
1/2 tsp
salt
1 1/4 c
sugar
1/2 c
shortening
3 large
eggs
1/2 c
sour cream
1 tsp
vanilla extract

FROSTING

3 Tbsp
flour
1/2 c
shortening
1/2 c
butter
1 1/2 c
powdered sugar
1/2 c
reserved berry juice
1 tsp
vanilla extract
1 pinch
salt

How to Make Strawberry cake from scratch

Step-by-Step

  • 1For Cake: preheat oven to 350 degrees bake time 30-40 minutes.
    Grease and flour 2 nine inch round cake pans or one 9x13 sheet cake pan.
  • 2Sift together flour, baking soda, sugar and salt. In lg mixing bowl add shortening, sour cream, eggs and vanilla. Beat on low speed 3 minutes then 3 minutes on medium speed, scrap bowl frequently.
  • 3Fold in drained berries. Pour into prepared pans. bake 30-40 min or until done. (springs back when touched in middle or toothpick comes out clean)
  • 4For frosting: Combine all ingredients in mixer bowl. Beat on medium - high speed 7-10 minutes or until desired consistency.
