I don't remember where I got this recipe, and in fact, just found my hand-written copy of it while trying to organize my recipes after moving. This is a really good, moist strawberry cake. Definitely a keeper.

Ingredients For strawberry cake

  • 1 box
    white cake mix
  • 1 sm
    box strawberry jello
  • 1 c
    vegetable oil
  • 1/2 c
    milk
  • 4
    eggs
  • 1 c
    mashed strawberries (do not drain)
  • FROSTING:
  • 1 stick
    butter, softened
  • 1 lb
    powdered sugar
  • 1/2 c
    mashed strawberries, drained

How To Make strawberry cake

    Grease a 9" x 11" cake pan. Pre-heat oven to 350°.

    In large bowl, mix cake mix, Jello, oil, milk, eggs and undrained strawberries. Pour into prepared pan. Bake for 35-40 minutes.

    For frosting, make sure that strawberries are very well drained. Mix all ingredients; if frosting is too thick, add more mashed berries until the right consistency. Spread on completely cooled cake.

    Refrigerate leftover cake.
