I got this from our local newspaper food section and have tried it once a long time ago. It was very moist and was great to make "strawberry" shortcake with. All that berry flavor was fantastic.

Ingredients

  • 3/4 pt
    fresh strawberries
  • 1 3/4 c
    flour
  • 1 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 5 Tbsp
    soft shortening
  • 1 c
    sugar
  • 2
    eggs
  • 5 Tbsp
    water
  • 1/2 c
    chopped walnuts or pecans

How to Make Strawberry Bread

Step-by-Step

  1. puree or mash berries to make 1 cup
  2. pour berries into sauce pan and heat to boiling and cook for 1 minute, stirring constantly. cool
  3. combine shortening, eggs and sugar and with electric mixer on medium, mix until fluffy
  4. mix alternately with sifted dry ingredients and water.
  5. stir in berries and nuts.
  6. pour into greased loaf pan
  7. bake in preheated 350 degree oven for 1 hour
