Ingredients
- 2 cups flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 - egg
- 3/4 cup milk
- 1/3 cup vegetable oil
- 2 - medium bananas, very ripe, mashed
- 1 1/2 cups strawberries, diced
- FROSTING:
- 4 ounces cream cheese, room temperature
- 1 tablespoon unsalted butter, room temperature
- 1/4 cup sugar
- 1 - very ripe medium banana
- 1/2 teaspoon orange blossom essence

Step 1Heat oven to 375 degrees. Prep muffin tin with liners. Beat all ingredients together except the bananas and strawberries in a large bowl, with a mixer on low speed, until blended.

Step 2Beat in bananas on medium speed for 2 minutes. Stir in the strawberries.

Step 3Pour the batter into the prepped pan and bake for 20 to 25 minutes. Do a toothpick test, and if it comes out clean, it's done.

Step 4Remove from the oven to a cooling rack for 10 minutes before removing the cupcakes from the muffin tin.

Step 5FROSTING: With a mixer, beat cream cheese and butter in a medium bowl until light and fluffy. Add sugar and beat till well blended. Beat in banana and orange blossom essence, set aside.

Step 6Frost or pipe when the cupcakes are completely cooled.
