Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 - egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 2 - medium bananas, very ripe, mashed
  • 1 1/2 cups strawberries, diced
  • FROSTING:
  • 4 ounces cream cheese, room temperature
  • 1 tablespoon unsalted butter, room temperature
  • 1/4 cup sugar
  • 1 - very ripe medium banana
  • 1/2 teaspoon orange blossom essence

How To Make strawberry banana cupcake w/orange blossom banana frosting

  • Step 1
    Heat oven to 375 degrees. Prep muffin tin with liners. Beat all ingredients together except the bananas and strawberries in a large bowl, with a mixer on low speed, until blended.
  • Step 2
    Beat in bananas on medium speed for 2 minutes. Stir in the strawberries.
  • Step 3
    Pour the batter into the prepped pan and bake for 20 to 25 minutes. Do a toothpick test, and if it comes out clean, it's done.
  • Step 4
    Remove from the oven to a cooling rack for 10 minutes before removing the cupcakes from the muffin tin.
  • Step 5
    FROSTING: With a mixer, beat cream cheese and butter in a medium bowl until light and fluffy. Add sugar and beat till well blended. Beat in banana and orange blossom essence, set aside.
  • Step 6
    Frost or pipe when the cupcakes are completely cooled.
