This is rather like a coffee cake and is extremely easy to make. My family loves it. An added plus is everything is mixed in the pan so not a lot of clean up. What's not to like?

Ingredients

  • 2 1/2 c
    all purpose flour
  • 1 1/2 c
    sugar
  • 1/2 c
    cocoa
  • 2 tsp
    soda
  • 1/2 tsp
    salt
  • 2/3 c
    cooking oil
  • 2 Tbsp
    vinegar
  • 1 Tbsp
    vanilla
  • 2 c
    cold coffee (or cold water)
  • 1/4 c
    sugar
  • 1/2 tsp
    cinnamon

How to Make Stir Crazy Cake

Step-by-Step

  1. Put flour, 1 1/2 cups sugar, cocoa, soda and salt into an ungreased 13x9x2-inch metal baking pan. Stir with a fork to mix.
  2. Form 3 wells in flour mixture. Pour oil into one well, vinegar in one, and vanilla in one. Pour cold coffee over all ingredients and stir with fork until well mixed. Do not beat.
  3. Combine remaining sugar and cinnamon; sprinkle over batter. Bake in 350 degree oven for 35-40 minutes.
