How to Make Srawberry Cream cheese Cupcakes
- Make cake mix as directed on box.I use cupcake liners in my pan. Fill a cookie scoop or ice cream scoop with cake batter and pour into cupcake pan. Bake cupcakes for 14 to 15 minutes at temperature it requires on cake box.
- While cupcakes are baking chop strawberries into very small pieces. Mix strawberries,cream cheese,lemon juice and frosting together. Will be lumpy and a bit runny but believe me its soo good. Set in the fridge until cupcakes are done baking and cooled. There may be extra mixture left over and I use this to top waffles or pancakes.
- Once cupcakes are cool hollow out the center and fill with strawberry cream cheese mixture. Its okay if some over flows on top of cupcake. Frost with frosting and refrigerate until time to serve. They will be messy but soooo YUMMY!!
