Ingredients For spumoni brownies

  • BROWNIES:
  • 1 box
    chewy fudge brownie mix or homemade
  • 1/3 c
    pistachio nuts, shelled & chopped
  • 12
    maraschino cherries, patted dry & chopped
  • FROSTING:
  • 1 c
    butter, room temperature
  • 3 c
    confectioners' sugar
  • 1 sm box
    pistachio pudding
  • 4 Tbsp
    milk
  • 1 tsp
    almond extract
  • 12
    maraschino cherries, patted dry & chopped (make sure they are dry)
  • 2 drops
    green food coloring
  • GARNISH:
  • 1/2 c
    pistachio nuts, chopped
  • stemed maraschino cherries

How To Make spumoni brownies

  • 1
    Prepare brownie batter according to package (for cake-like brownies) & then add pistachios & cherries; mix well. Pour batter into 9" square pan. Bake 30 - 40 minutes. Cool completely.

    On medium high speed, beat butter until fluffy. In medium bowl combine powdered sugar & dry pudding mix; mix well. Gradually beat in sugar/pudding mixture into butter. Add milk, almond extract & food coloring until fluffy. Fold in cherries. Spread over cooled brownies.

    Sprinkle with chopped pistachios & stemmed cherries.
