spiced zucchini cake with cream cheese frosting

I have made this for years, one of my families favorites. Also you can make this many ways it can be a layered cake, bundt cake, 13x9 pan, cupcakes or even muffins. Replace frosting with a Crumble Topping.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon salt
  • 1 cup vegetable oil
  • 4 - eggs, beaten
  • 3 cups zucchini, shredded with peeling
  • CREAM CHEESE FROSTING
  • 1/2 cup butter or margarine softened
  • 1-8oz. package cream cheese, room temperature
  • 1 pound powdered sugar
  • 2 teaspoons vanilla extract

How To Make spiced zucchini cake with cream cheese frosting

  • Step 1
    Combine the first 5 ingredients, in large mixing bowl.Then add oil, eggs and shredded zucchini.Mix well, pour into greased pan.Bake at 350 degrees, depending on size of pan (13x9)will take about 35 to 45 minutes or check with toothpick until it comes out clean.
  • Step 2
    Frosting: Cream together butter and cream cheese. Add powdered sugar and vanilla mix well. For thicker frosting on layered cakes, just add more powdered sugar a half cup at a time till desired thickness.
