Ingredients
- 2 cups crushed ginger snaps
- 1/2 cup crushed pecans
- 5 tablespoons butter, melted
- 4 packages cream cheese, room temperature-reduced fat
- 1 1/4 cups sugar
- 1 can pumpkin
- 2 tablespoons pumpkin pie spices
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 cup fine chopped pecans

Step 1Preheat oven to 325. Mix crumbs and nuts with melted butter and press onto bottom and up about 1 inch of a 9 inch springform pan. Beat cream cheese and sugar very well together and add pumkin and spices and vanilla, adding one egg at a time until all blended well. Pour into crust then top with chopped pecans bake 1 hour and 20-30 minutes until center is almost set. Loosen the cake from rim of pan, cool before removing rim....Refrigerate 4 hours before serving to assure setting. Serve with fresh whip cream or Cool whop w/ a dust of nutmeg to decorate!
