spiced apple cinnamon bars

A recent trip to a local orchard left me with an abundance of fresh apples. After experimenting with several different recipes, I came up with this one. :-) I hope you enjoy them! (Try mixing two or more different varieties of apples for a wide range of flavor. I like Jonathan, Jonagold, Golden Delicious and Granny Smith for baking)

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice (or slightly more)
  • 1/2 cup butter (melted)
  • 3/4 cup brown sugar (i prefer dark)
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 cups apples (peeled, chopped)
  • 1/2 cup walnuts (finely chopped/optional)
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

How To Make spiced apple cinnamon bars

  • Step 1
    Preheat oven to 350 degrees. Spray 9 x13 inch pan with non stick cooking spray. Sift together flour, baking powder, salt and spices.
  • Step 2
    In a large bowl, mix together melted butter, brown sugar and white sugar until smooth. Add eggs and extracts and blend well.
  • Step 3
    Blend in flour mixture and then stir in the apples and walnuts (optional).
  • Step 4
    Spread evenly in prepared pan. In a small bowl, combine remaining sugar and cinnamon and sprinkle on top.
  • Step 5
    Bake for 30 minutes until center springs back when slightly touched. Cool and cut into bars.
