spiced apple cake

I took a few notes and combined a few recipes to come up with this. This cake taste more "muffin like" than "cake like" as it is not overly sweet. I make it as a cake in a 9x13 pan, but you could also do it in muffin tins or in bread pans. Goes great with vanilla ice cream, coffee, and/or tea.

Ingredients For spiced apple cake

  • APPLES
  • 5
    apples (cortland, macintosh, or empire)
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    pumpkin pie spice
  • 2 Tbsp
    sugar
  • CAKE
  • 1 1/2 c
    flour
  • 1 1/2 c
    almond meal
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    sugar
  • 1/2 c
    truvia
  • 1 c
    butter, room temperature
  • 4
    eggs
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    almond extract
  • 1/4 c
    chai tea
  • 1/4 c
    whisky, or more chai tea if you prefer not to use whisky
  • 2 Tbsp
    sugar
  • 1/2 tsp
    cinnemon
  • 1/2 tsp
    pumpkin pie spice

How To Make spiced apple cake

  • 1
    Peel, core, and cut apples into very small cubes. Mix apples in a large bowl with lemon juice, pumpkin pie spice, and sugar. Set aside.

    Preheat oven to 350. Mix flour, almond meal, baking powder, and salt in a small bowl. Set aside

    Cream together butter, sugar, and truvia.

    Add eggs, vanilla extract, almond extract, chai tea, and whisky to butter mixture. Mixture will be lumpy.

    Add flour mixture to egg mixture 1/2 cup at a time. Mix until well blended.

    Add apples to cake mixture, fold apples in carefully until just mixed.

    Pour cake mixture into a well greased 9x13 pan (alternatively, you can use muffin tins or bread pans).

    Mix the remaining sugar, pumpkin pie spice, and cinnamon in a small bowl. Sprinkle mixture over cake.

    Bake at 350 for 1 hour to 75 minutes, or until toothpick comes out clean.
