spiced apple cake
I took a few notes and combined a few recipes to come up with this. This cake taste more "muffin like" than "cake like" as it is not overly sweet. I make it as a cake in a 9x13 pan, but you could also do it in muffin tins or in bread pans. Goes great with vanilla ice cream, coffee, and/or tea.

Ingredients
- APPLES
- 5 - apples (cortland, macintosh, or empire)
- 2 tablespoons lemon juice
- 1 tablespoon pumpkin pie spice
- 2 tablespoons sugar
- CAKE
- 1 1/2 cups flour
- 1 1/2 cups almond meal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1/2 cup truvia
- 1 cup butter, room temperature
- 4 - eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon almond extract
- 1/4 cup chai tea
- 1/4 cup whisky, or more chai tea if you prefer not to use whisky
- 2 tablespoons sugar
- 1/2 teaspoon cinnemon
- 1/2 teaspoon pumpkin pie spice
How To Make spiced apple cake

Step 1Peel, core, and cut apples into very small cubes. Mix apples in a large bowl with lemon juice, pumpkin pie spice, and sugar. Set aside.

Step 2Preheat oven to 350. Mix flour, almond meal, baking powder, and salt in a small bowl. Set aside

Step 3Cream together butter, sugar, and truvia.

Step 4Add eggs, vanilla extract, almond extract, chai tea, and whisky to butter mixture. Mixture will be lumpy.

Step 5Add flour mixture to egg mixture 1/2 cup at a time. Mix until well blended.

Step 6Add apples to cake mixture, fold apples in carefully until just mixed.

Step 7Pour cake mixture into a well greased 9x13 pan (alternatively, you can use muffin tins or bread pans).

Step 8Mix the remaining sugar, pumpkin pie spice, and cinnamon in a small bowl. Sprinkle mixture over cake.

Step 9Bake at 350 for 1 hour to 75 minutes, or until toothpick comes out clean.
