This old fashioned cake is made without eggs. It is very moist and can have a variety of frostings, or none. It is flavorful all ways.

Ingredients

  • 1 cup raisins
  • 1 cup brown sugar, firmly packed
  • 1 cup water
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon cloves ground
  • 1/2 cup butter
  • BOIL ABOVE MIXTURE FOR 2 MINS,
  • 1 1/2 cups flour
  • 1 teaspoon baking soda

How To Make spice cake

  • Step 1
    Boil the first 6 ingredients for 2 minutes. Set aside to cool.
  • Step 2
    Add the flour and baking soda and stir with a fork, no need to beat the batter.
  • Step 3
    Pour into a greased 8X8 cake pan, I use a square glass dish. Bake for 30 mins at 350 degrees. Use a cake tester to see if it's done ( when it comes out clean).
  • Step 4
    When the cake is cooled, I usually drizzle an icing over it or dust with confectionery sugar.
