How to Make Spanish Orange-Almond Cake (Torta De Almendra)

Step-by-Step

  1. Heat oven to 350°F. Grease and flour a 9-inch round (or 9x9 square) baking pan.
  2. In a large bowl, beat for 30 seconds on low speed all ingredients (except the almonds, 1 Tbsp sugar and liqueur). Then beat on high for 3 minutes, scraping bowl occasionally. Pour batter into prepared pan. Sprinkle almonds on top of cake batter.
  3. Bake in preheated oven for about 40 minutes for round pan or 45 minutes for square pan, or until a toothpick inserted in center comes out clean.
  4. Remove pan from oven. Sprinkle 1 Tbsp sugar on surface of the hot cake. Then drizzle the orange liqueur over cake surface and let it absorb into the cake. Cool completely before slicing.
