My aunt used to make this cake and still does on special nights when her nephews need comfort food. I am including the recipe card image, showing her original handwriting.

Ingredients

  • 10 ounces fresh or frozen coconut
  • 12 ounces sour cream
  • 1-1/4 cup sugar (can use granulated or confectioner's)
  • 1 teaspoon vanilla flavoring
  • 1 box duncan hines yellow cake mix

How To Make sour cream coconut cake

  • Step 1
    Mix together the coconut, sour cream, sugar and vanilla. Chill overnight.
  • Step 2
    Bake cake per box directions, using 2 layer pans.
  • Step 3
    Spread frosting on layers, top and sides of cake. Cover and chill for at least 5 days before cutting.
