sour cream coconut cake
My aunt used to make this cake and still does on special nights when her nephews need comfort food. I am including the recipe card image, showing her original handwriting.

Ingredients
- 10 ounces fresh or frozen coconut
- 12 ounces sour cream
- 1-1/4 cup sugar (can use granulated or confectioner's)
- 1 teaspoon vanilla flavoring
- 1 box duncan hines yellow cake mix
How To Make sour cream coconut cake

Step 1Mix together the coconut, sour cream, sugar and vanilla. Chill overnight.

Step 2Bake cake per box directions, using 2 layer pans.

Step 3Spread frosting on layers, top and sides of cake. Cover and chill for at least 5 days before cutting.
