Ingredients
- 1 cup butter, room temperature
- 2 cups sugar
- 4 - eggs, separated
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- 3 cups all purpose flour, sifted
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup coconut cream filling
- 1 can fluffy white frosting
- 1 1/2 cups coconut, shredded
- 3/4 cup milk
How To Make so simple coconut cake...

Step 1Heat oven to 350F.Lightly grease & flour 3 8-inch round cake pans.In a lager bowl cream the butter & sugar. Then add the egg yolks,vanilla & lemon extract.Beat everything very well.

Step 2Then in a medium bowl sift the flour with baking powder & salt together.Then alternately with milk to the creamed butter mixture & mix well.

Step 3In an other medium bowl oh high speed beat the egg whites until stiff peaks have form & fold into the batter. Pour into the cake pans & bake for 25 to 30 mins.

Step 4Let cool thoroughly, cut in half & fill with coconut filling & then frost with with the frosting. Sprinkle top & sides with coconut.
