Ingredients For snowball cake, mom's

  • 2 c
    orange juice
  • 1/2 c
    boiling water
  • 1/4 c
    cold water
  • 1 1/2
    envelopes unflavored gelatin (i use knox)
  • 2 md
    lemons, you need the juice only
  • 1 c
    sugar
  • 1 lg
    angel food cake mix
  • 1 sm
    angel food cake mix
  • 1 pt
    whipping cream
  • 1 pkg
    shredded coconut
  • powdered sugar to taste (for frosting part)

How To Make snowball cake, mom's

    Soften gelatin in cold water, add boiling water, sugar and juices. Cool until nearly set. Remove brown crust from cake, break into bite sized pieces. Line a bowl with waxed paper, criss cross 2 pieces. Whip 1 cup cream and fold with gelatin. Place layer of gelatin, then cake, and repeat, ending with gelatin. Cover bowl with a plate and chill overnight. Unmold to plate, remove waxed paper. Beat remaining cream with powdered sugar, frost cake and coat with coconut. Chill until ready to serve.
