A citrusy, coconut topped, yummy cake!

Ingredients

  • 2 cups orange juice
  • 1/2 cup boiling water
  • 1/4 cup cold water
  • 1 1/2 - envelopes unflavored gelatin (i use knox)
  • 2 medium lemons, you need the juice only
  • 1 cup sugar
  • 1 large angel food cake mix
  • 1 small angel food cake mix
  • 1 pint whipping cream
  • 1 package shredded coconut
  • - powdered sugar to taste (for frosting part)

How To Make snowball cake, mom's

  • Step 1
    Soften gelatin in cold water, add boiling water, sugar and juices. Cool until nearly set. Remove brown crust from cake, break into bite sized pieces. Line a bowl with waxed paper, criss cross 2 pieces. Whip 1 cup cream and fold with gelatin. Place layer of gelatin, then cake, and repeat, ending with gelatin. Cover bowl with a plate and chill overnight. Unmold to plate, remove waxed paper. Beat remaining cream with powdered sugar, frost cake and coat with coconut. Chill until ready to serve.
