Ingredients

  • 2/3 c
    cake flour
  • 1/2 c
    graham cracker crumbs
  • 2 tsp
    baking powder
  • 1 c
    milk
  • 1/2 c
    applesauce
  • 1 tsp
    vanilla extract
  • 3
    egg whites
  • 1/4 tsp
    cream of tartar
  • 1/2 c
    sugar
  • 2 c
    marshmallows, mini
  • 1/4 c
    chocolate mini-chips
  • 1/4 c
    heathcliff bars, broken in pieces (opt.)

How to Make Smores Cake

Step-by-Step

  1. Lightly butter 2 - 8" round springform cake pans or spray with non-stick cooking spray.
  2. Stir together cake flour, graham cracker crumbs and baking powder in medium bowl.
  3. In another bowl, combine milk, applesauce and vanilla.
  4. Add to dry ingredients, stirring just until blended.
  5. Beat eggs whites until frothy.
  6. Add cream of tartar and continue beating until thick and foamy.
  7. Gradually add sugar, beating until soft, smooth peaks form.
  8. Fold half into batter until blended.
  9. Fold in remaining whites until blended.
  10. Divide batter into prepared pans, spreading evenly.
  11. Bake at 350 for 15-20 minutes or until wood pick inserted in center comes out clean.
  12. Sprinkle marshmallows (you may use MORE than directed as they are fat-free) and chocolate chips over tops of cakes. Add broken heathcliff bar pieces as desired.
  13. Place under broiler to brown slightly.
  14. Let cool to warm and serve.
