Ingredients

  • 2/3 cup cake flour
  • 1/2 cup graham cracker crumbs
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/2 cup applesauce
  • 1 teaspoon vanilla extract
  • 3 - egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar
  • 2 cups marshmallows, mini
  • 1/4 cup chocolate mini-chips
  • 1/4 cup heathcliff bars, broken in pieces (opt.)

How To Make smores cake

  • Step 1
    Lightly butter 2 - 8\" round springform cake pans or spray with non-stick cooking spray.
  • Step 2
    Stir together cake flour, graham cracker crumbs and baking powder in medium bowl.
  • Step 3
    In another bowl, combine milk, applesauce and vanilla.
  • Step 4
    Add to dry ingredients, stirring just until blended.
  • Step 5
    Beat eggs whites until frothy.
  • Step 6
    Add cream of tartar and continue beating until thick and foamy.
  • Step 7
    Gradually add sugar, beating until soft, smooth peaks form.
  • Step 8
    Fold half into batter until blended.
  • Step 9
    Fold in remaining whites until blended.
  • Step 10
    Divide batter into prepared pans, spreading evenly.
  • Step 11
    Bake at 350 for 15-20 minutes or until wood pick inserted in center comes out clean.
  • Step 12
    Sprinkle marshmallows (you may use MORE than directed as they are fat-free) and chocolate chips over tops of cakes. Add broken heathcliff bar pieces as desired.
  • Step 13
    Place under broiler to brown slightly.
  • Step 14
    Let cool to warm and serve.
