Sis (Cheryl), my husband's sister, would make this colorful cake for his birthday every year.
She was so proud to present this to him.
I do not think he appreciated it being pink, but never complained.
Because his birthday is coming up, I asked him if he would like me to make this cake for him..He said what cake? I don't remember Sis making me that cake? I told him that if he was at his sister's house, on his birthday, she would make one for him, lickity-split.

Ingredients

  • 2 1/4 c
    flour
  • 1 1/2 c
    sugar
  • 3 1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 c
    snowdrift (crisco)
  • 1/2 c
    milk
  • 1/2 c
    maraschino cherry juice
  • 1/2 tsp
    almond extract
  • 4
    egg whites (unbeaten)
  • 18
    maraschino cherries, chopped
  • 1/2 c
    chopped nuts

How to Make Sis's Maraschino Cherry Cake

Step-by-Step

  1. Preheat oven 350 degrees.
    Mix dry ingredients together in bowl with wire whip.
    In a mixer, blend snowdrift, milk, cherry juice and almond extract.
    Beat 2 minutes.
    Add dry ingredients.
    Beat 2 minutes.
    Add egg whites.
    Beat 2 minutes.
    Fold in cherries and nuts.
    Pour into two greased and floured 8 or 9-inch cake pans.
  2. Put into oven and bake for 30 to 40 minutes.
    Cool in pans for 15 minutes; turn out on cake racks.
    Cool.
    Frost with cherry butter cream icing
    OPT: Decorate with maraschino cherries
