simplified lemonade cake

Although I love the recipe I got from a relative for a "from scratch" lemonade cake, I don't always have the time or patience. This is just as yummy, very lemony and takes much less effort to put out. Perfect for lemon lovers!

Ingredients

  • CAKE
  • 1 3oz packages lemon flavored jello
  • 3/4 cup boiling water
  • 1 box lemon cake mix
  • 3/4 cup applesauce (plain)
  • 4 - eggs
  • FROSTING
  • 2 tablespoons softened butter or margarine
  • 2 teaspoons grated lemon zest
  • 2 teaspoons thawed lemonade concentrate
  • 1/2 teaspoon vanilla extract
  • 8 ounces cream cheese (i use the 1/3 less fat)
  • 3 1/2 cups powdered sugar

How To Make simplified lemonade cake

  • Step 1
    Preheat oven to 350 degrees. Grease and flour a 10 inch bunt/tube pan.
  • Step 2
    Cake: Dissolve the lemon jello in boiling water and put aside. DO NOT allow to set. Combine cake mix, vegetable oil and eggs. Beat until combined and add the liquid jello. Beat for 5 minutes on medium speed setting. Pour batter into a prepared bunt pan and bake at 350 degrees for 1 hour. Cool completely before removing from pan.
  • Step 3
    Frosting: In a large bowl, beat butter, lemon, lemonade concentrate, vanilla and cream cheese on high speed until fluffy. Add powdered sugar and beat at low speed until blended. Chill 1 hour before icing cake.
  • Step 4
    Sometimes instead of using the icing on the cake I dust it with powdered sugar instead.
