simple strawberry shortcake
My mom used to make this all the time using Bisquick baking mix for a fast, simple dessert.

Ingredients
- CAKES
- 2 1/3 cups bisquick or similar baking mix
- 2/3 cup vanilla almond milk
- 2 tablespoons white sugar
- 3 tablespoons melted butter/margarine
- STRAWBERRIES IN SYRUP
- 1 quart strawberries, washed, hulled and sliced
- 1/4 - 1/2 cup sugar (optional if you don't want the extra sugar or syrupy strawberries)
- WHIPPED CREAM
- 1/2 pint heavy whipping cream
- 1/2 teaspoon almond extract (vanilla works well too)
- 1 tablespoon white sugar

Step 1Preheat oven to 425 degrees. Mix cake ingredients together and prepare like drop biscuits. Bake 12-14 minutes until golden brown. Remove from oven and set on wire racks to cool.

Step 2Prepare strawberries and stir sugar over them well. Cover and set in fridge until ready to serve, at least 30 minutes.

Step 3When you are close to ready to serve, make the whipped topping. Whip the cream and sugar together until it starts to form peaks. Add the almond/vanilla extract and continue whipping until desired consistency.

Step 4Split the shortcakes in half and fill with strawberries. Top with a dollop (or more) of whipped cream and you can even drizzle some of the strawberry syrup over for a little extra sweetness and nice presentation.
