simple strawberry shortcake

My mom used to make this all the time using Bisquick baking mix for a fast, simple dessert.

Ingredients

  • CAKES
  • 2 1/3 cups bisquick or similar baking mix
  • 2/3 cup vanilla almond milk
  • 2 tablespoons white sugar
  • 3 tablespoons melted butter/margarine
  • STRAWBERRIES IN SYRUP
  • 1 quart strawberries, washed, hulled and sliced
  • 1/4 - 1/2 cup sugar (optional if you don't want the extra sugar or syrupy strawberries)
  • WHIPPED CREAM
  • 1/2 pint heavy whipping cream
  • 1/2 teaspoon almond extract (vanilla works well too)
  • 1 tablespoon white sugar

How To Make simple strawberry shortcake

  • Step 1
    Preheat oven to 425 degrees. Mix cake ingredients together and prepare like drop biscuits. Bake 12-14 minutes until golden brown. Remove from oven and set on wire racks to cool.
  • Step 2
    Prepare strawberries and stir sugar over them well. Cover and set in fridge until ready to serve, at least 30 minutes.
  • Step 3
    When you are close to ready to serve, make the whipped topping. Whip the cream and sugar together until it starts to form peaks. Add the almond/vanilla extract and continue whipping until desired consistency.
  • Step 4
    Split the shortcakes in half and fill with strawberries. Top with a dollop (or more) of whipped cream and you can even drizzle some of the strawberry syrup over for a little extra sweetness and nice presentation.
