found this years ago on my first internet cooking trip. i have tried several but these are my favorite. sometimes i add a strusel or sugar topping.

Ingredients

  • 2 c
    flour
  • 1/2 c
    sugar
  • 2 1/2 tsp
    baking soda
  • 2 tsp
    instant coffee
  • 1/2 tsp
    salt
  • 1
    egg
  • 1 c
    milk
  • 1 stick
    butter melted
  • 1 tsp
    vanilla
  • 3/4 c
    mini choc chips

How to Make shatner's cappuccino muffins

Step-by-Step

  1. mix the dry ingredients. mix the wet ingredients. comine the two and fold in the choc chips. stir until just moistened. pour into 12 muffin tin or 6 of the king size muffin tin. can add a struesel on top or sprinkly with turindo sugar. for a dessert treat, warm in microwave and spread a little chocolate hazlenut spread on them.
