1 pkgyellow or white cake mix
1-1/4 ccherry flavored 7-u soda
1/2 cvegetable oil
3 largeeggs, room temp
·red food coloring drops
1 jar(s)maraschino cherries
1 can(s)cream cheese frosting
2 Tbspcherry flavored 7-up soda
3 Tbspreserved maraschino cherry juice
How to Make Shara's Shirley temple cupcakes
- Preheat oven to 350. Spray cooking spray lightly onto muffin pan w/ 18 muffin cups or use muffin baking cups.
- In a large bowl, beat cake mix, 1-1/4 cups soda, oil & eggs about 2 minutes until combined. Set aside 1/3 cup of batter in a small bowl. To the small bowl of batter, add a few drops of red food coloring. Mix into the batter until it turns red.
- Spoon the red batter evenly into baking cups. Remove stems from 18 Maraschino cherries and place 1 cherry in center of each muffin cup. Top w/ the remaining batter. Bake 15-20 minutes or until a toothpick inserted in center of a cupcake comes out clean. Let cool. Place frosting in a medium bowl. Add remaining soda, the 3 tbsp. of reserved cherry juice & a drop of red food coloring. Beat on low just until blended. Frost cupcakes and top w/ a cherry.
