How to Make Russian Tea Cakes
- Preheat oven to 400.
- Using pastry blender, mix butter, salt, and ½ cup powdered sugar until smooth. Mix in vanilla.
- Slowly beat in flour and nuts, if using.
- Chill dough for 30 minutes, then form into ¾- to 1-inch balls. Arrange close together on baking sheet. Bake 8-10 minutes or until set, but not brown.
*NOTE* Cookies can be placed very close together, as they will not grow.
- Roll hot teacakes in powdered sugar, then let cool. Once cool, roll teacakes again in powdered sugar.
