I don't drink alcohol, but I love this cake. It was given to me by Peggy Kissinger, a LONG time ago, but I love to fix it, although I don't fix it often. I suspect the calorie count it a little high! You gotta try it! :)

Ingredients

  • 1 - yellow duncan hines cake mix
  • 1 - small package instant vanilla pudding
  • 1/2 cup water
  • 1/2 cup bacardi dark rum
  • 1/2 cup oil
  • 4 - eggs, room temperature
  • 1/2 cup chopped pecan s
  • GLAZE
  • 1 stick butter, melted
  • 1/4 cup rum
  • 1/4 cup water
  • 1 cup sugar

How To Make rum cake

  • Step 1
    Mix dry ingredients together and then add other ingredients. Mix well.
  • Step 2
    Grease and flour a tube pan. Sprinkle 1/2 cup or more of chopped pecans evenly in the bottom of the pan. Pour batter on this and bake 350 for 1 hour.
  • Step 3
    Glaze....Cook until syrupy or kind of thick. Pour over HOT cake in pan. Let set FIVE minutes - NO MORE than that! Then dump the cake onto a cake dish. It's really better the second day. I just know you're going to love it!
