Ingredients
- 2 cups all purpose flour
- 1 teaspoon flour
- 1/2 cup mini semi sweet chocolate chips
- 2 tablespoons mini semi sweet chocolate chiips
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 egg yolk
- 1 cup white sugar
- 2 teaspoons vanilla extract
- 1/2 cup olive oil
- 1 cup whole milk ricotta
- confectioners sugar for dusting
How To Make ricotta chocolate chip cake

Step 1Preheat oven to 350 degrees Spray a tube pan with baking spray Set aside

Step 2Put 1/2 cup chocolate chips ina bowl and add 1 teaspoon of flour to them. Toss until chips are Well coated Set aside

Step 3In a mixing bowl, whisk together 2 cups flour, baking powder and salt. Set aside.

Step 4In a mixing bowl combine the eggs, yolk,sugar and vanilla. Beat with an electric mixer on medium speed until fluffy. Add in the oil and beat until combined. Beat in the ricotta until just incorporated.

Step 5Beat in the dry ingredients until just incorporated. Do not over mix. The batter will be thick. Fold in the chocolate chips tossed in flour and spoon into the prepared pan

Step 6Top with the remaining 2 tablespoons of chips

Step 7Bake for 40 minutes. Cool and dust with confectioners sugar as desired.
