Pumpkin is a favorite ingredient in my family! We can't wait until Fall arrives so that we can have pumpkin desserts, pumpkin coffee -even pumpkin pasta! Our Thanksgiving is not complete without 2 of these breads at our dinner table, they even stay on the table for dessert (with the Pumpkin Pie, of course!). Usually my husband asks me to freeze the extra just for him!

Ingredients

  • 2/3 cup shortening, butter flavor
  • 2 2/3 cups sugar
  • 4 - eggs
  • 1 can (16 oz.) pumpkin (not pumpkin pie mix)
  • 2/3 cup water
  • 3 1/3 cups all purpose flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 2/3 cup coarsely chopped nuts, walnuts or pecans
  • 2/3 cup raisins, we prefer white raisins

How To Make rich's favorite pumpkin bread (makes 2 loaves)

  • Step 1
    Preheat oven to 350 degrees F. Grease 2-9"X 5" X 3" loaf pans, bottoms only.
  • Step 2
    In a large bowl or electric mixer, cream shortening and sugar until light and fluffy.
  • Step 3
    Stir in (on medium low speed on mixer) eggs, pumpkin and water.
  • Step 4
    Blend in flour, salt, baking soda, baking powder, cinnamon and cloves. Make sure that everything is blended evenly, but do not over mix or the bread will not be tender.
  • Step 5
    Stir in (on stir or low on mixer) nuts and raisins.
  • Step 6
    Spread evenly into pans, mixture will be thick. Bake about 70 minutes, or until a wooden pick inserted into center comes out clean.
  • Step 7
    Let cool 10 minutes in pan and then turn out onto a rack to finish cooling.
  • Step 8
    These loaves can be frozen. Wrap well in foil. Let thaw before serving. I've frozen them for up to 2 weeks with success.
